Preheat the oven to 170°C and line a baking tray with parchment paper.
Place the peanut butter in a deep bowl. If it is too firm, warm it slightly in a small saucepan or in the microwave so it softens.
Add the baking soda, flour, White Granulated Sugar SUGARTIA and salt, and mix.
Add the applesauce and vanilla extract and mix again until a smooth dough forms.
Shape the dough into small balls and arrange them on the baking tray, leaving a little space between them.
Bake for about 8 minutes.
Remove from the oven and let the cookies cool.
The cookies will be quite soft when they come out of the oven, so leave them on the tray for at least 10 minutes before trying to move them. As they cool, they firm up and develop a better texture.
